Ingredients

  • 2 Slices Thick bread (sourdough, white, or whole wheat)
  • 1 Piece Egg
  • 2–3 Slices Cooked bacon (or turkey bacon)
  • 1 Small Sausage patty
  • 2 tbsp Cooked sausage crumbles (optional)
  • 1-2 Slices Cheddar cheese (or mozzarella/Swiss)
  • 1 tbsp Butter
  • 1 tbsp Mayonnaise or Cream cheese (optional spread)
  • 2–3 Slices Tomato (optional)
  • A handful of baby spinach (optional)
  • Salt & black pepper, to taste

Equipment

  • Frying pan or skillet
  • Spatula
  • Bread knife
  • Butter knife
  • Grill press or sandwich maker (optional)

Method

  1. Cook the Egg:

Heat a small amount of butter in a pan. Crack the egg and cook it fried, scrambled, or over-easy β€” whichever you prefer. Season with salt and pepper.

  2. Prepare the Bread:

Lightly butter one side of each bread slice (this will be the outside).Spread mayo or cream cheese on the inside if desired.

  3. Assemble the Toastie:

Place one slice of bread (buttered side down) in the pan or on a board.

    Add a layer of cheese.

    Add the cooked egg.

Place bacon and sausage on top.

Add tomatoes and spinach if using.

Top with another slice of cheese.

Finish with the second slice of bread (buttered side up).

  4. Toast the sandwich:

Heat a pan over medium heat. Place the sandwich in the pan and cook for 3–4 minutes per side, pressing gently with a spatula or grill press, until golden brown and the cheese is melted.

  5. Serve:

Slice in half and enjoy warm, melty, and fully loaded!

Notes

Β

  • Add sliced avo, caramelized onions, or hash browns for an extra-loaded version.
  • Swap bacon for ham, smoked turkey, or veggie bacon for variation.
  • Use hot sauce, sriracha mayo, or garlic aioli for added flavor.
  • Great for meal prep: Cook bacon and eggs ahead of time for faster mornings.
  • Works perfectly in a sandwich press, air fryer, or toaster grill.
