- Cook the Egg:Heat a small amount of butter in a pan. Crack the egg and cook it fried, scrambled, or over-easy — whichever you prefer. Season with salt and pepper.
- Prepare the Bread:Lightly butter one side of each bread slice (this will be the outside).Spread mayo or cream cheese on the inside if desired.
- Assemble the Toastie:Place one slice of bread (buttered side down) in the pan or on a board.Add a layer of cheese.Add the cooked egg.Place bacon and sausage on top.Add tomatoes and spinach if using.Top with another slice of cheese.Finish with the second slice of bread (buttered side up).
- Toast the sandwich:Heat a pan over medium heat. Place the sandwich in the pan and cook for 3–4 minutes per side, pressing gently with a spatula or grill press, until golden brown and the cheese is melted.
- Serve:Slice in half and enjoy warm, melty, and fully loaded!
