- Make the tuna filling:In a bowl, combine tuna, mayonnaise, mustard (if using), chopped onion, sweetcorn, lemon juice, salt, and pepper. Mix until creamy and well blended.
- Prepare the bread:Butter one side of each bread slice β this will be the outside for toasting.
- Assemble the toastie:Place one slice of bread, buttered side down. Add a layer of cheese. Spoon the tuna mixture evenly over the cheese. Add optional extras like tomato, pickles, or more cheese. Top with the second slice of bread, buttered side up.
- Toast the sandwich:Heat a frying pan over medium heat.Place the toastie in the pan and cook for 3β4 minutes each side, pressing gently with a spatula until golden and the cheese has melted.Or use a sandwich press for an easy, evenly melted toastie.
- Serve:Slice and enjoy warm, cheesy, and perfectly toasted!
